Unfortunately, anything lost as a result of terraforming would not be able to be recovered. This is the reason there are so many warnings associated with the terraformer. As for the islands, it may take terraforming multiple chunks in order to get multiple islands, as only terraforming one spot doesn't necessarily guarantee a set number of islands.
